STRAWBERRY SHORTCAKE

1 to 1 1/2 C Minature Marshmellows
2 10 oz. pkg. Frozen Strawberries
1 small 3 oz. Dry Strawberry Gelatin
2 1/2 C All Purpose Flour
1 1/2 C Granulated Sugar
1/2 C Shortening
3 tsp. Baking Powder
1/2 tsp. Salt
1 C Milk
1 tsp. Vanilla
3 eggs

Sprinkle marshmellows on the bottom of a 9 x 13 greased pan. Combine gelatin and thawed strawberries & juice and set aside. Mix remaining ingredients until moist, then mix 3 minutes. Pour batter over marshmellows, then spoon berry-gelatin mixture on top of batter. Bake 350 degrees for 45-55 minutes or until done. May be eaten with whipped cream, ice cream or plain.
