
STRAWBERRY SHORTCAKE
- 1 to 1 1/2 C Minature Marshmellows
- 2 10 oz. pkg. Frozen Strawberries
- 1 small 3 oz. Dry Strawberry Gelatin
- 2 1/2 C All Purpose Flour
- 1 1/2 C Granulated Sugar
- 1/2 C Shortening
- 3 tsp. Baking Powder
- 1/2 tsp. Salt
- 1 C Milk
- 1 tsp. Vanilla
- 3 eggs
Sprinkle marshmellows on the bottom of a 9 x 13 greased pan. Combine gelatin
and thawed strawberries & juice and set aside. Mix remaining ingredients
until moist, then mix 3 minutes. Pour batter over marshmellows, then spoon
berry-gelatin mixture on top of batter. Bake 350 degrees for
45-55 minutes or until done. May be eaten with whipped cream,
ice cream or plain.
